POTATO MASALA SAMBAR by Vahchef – VahRehVah
Sambhar is the main course of Tamilian lunch. It is prepared with thuvar dhal, tamarind juice and vegetables. It is mixed with white rice and taken along with a curry and koottu.

Ingredients:
Toor dal 1 Cup
Oil 2 Tablespoons
Chana dal 1 Tablespoons
Cumin seeds 1 Teaspoons
Coriander seeds 1 Teaspoons
Peppercorns 1 Teaspoons
Urad dal 1 Teaspoons
Hing 1 Pinch
Curry leaves 2 Springs
Turmeric 1 Pinch
Grated coconut 2 Tablespoons
Greenchilly 3 Numbers
Dry red chilli 3 Numbers
Directions:
1. Heat oil in a pan add chana dal, cumin seeds, coriander seeds, peppercorns, urad dal, hing curry leaves, turmeric, saute it for 2 minutes.
2. Add freshly grated coconut, green chilli, red chilli, onions,cook this for 3 minutes then let it cool down and make it into a paste.
3. In a hot pan heat oil and add mustard seeds when they splutter add cumin seeds, curry leaves, green chilli, tomato pieces and saute it and add prepared masala paste roast the masala in oil for 3 minutes then add water, salt put the lid on and bring it to boil.
4. Once this comes to boil add boiled toor dal boil it by adding tamarind juice, jaggery.
5. After 5 minutes add boiled potato pieces cook for 3 minutes and add chopped coriander then switch off the flame.
6. Serve this with Rice and papad.
